Savoury Mince

Soo.. I¬†didn’t¬†get home until quite late last night which¬†didn’t¬†really allow much time for me to cook anything.
But I came across this…
  

Now I know its probably not 100% Dukan Friendly, but it was the best thing I could come up with, with such little time and resources! We will always come across situations where there is no Dukan Friendly options so sometimes we need to make the ‘best choice’. ūüôā
My assumption was that the majority of  carbs in this packet would be in the pasta, which I did not use.. so I was hoping that this should be okay.. for a one time only thing!

So I browned the mince (Extra Lean Mince from Coles) and then drained the excess fat/oil that comes from the mince while cooking (with paper towel).
I then added the Tandaco mix (minus the pasta) and followed the directions on the box.
But I also added some garlic powder, oregano, cumin, salt & pepper for a little extra flavor.


It was actually very yummy ūüôā It had a lot of flavour!
This does serve 4 though, so most of it may go to waste, or my puppy might enjoy it ūüôā

Zucchini Fritter & Pumpkin Chips

For the last couple of days I have been pondering  about what to serve with my Zucchini Fritter and the first thing that popped into my head was hot potato chips and once that idea was in my head it was not going anywhere!

Fighting all temptations I decided that I would make an attempt at Pumpkin Chips and…
I HAVE JUST FOUND MY NEW FAVORITE FOOD ! ūüôā ¬† ¬†Delicious! My only criticism¬†would be that I should have cooked them for a tad longer to add some crisp, but overall that did not matter as I REALLY enjoyed them!

Zucchini Fritter

Ingredients:
4 Eggs
4 Egg Whites
2 Zucchini’s
200 grams Low/No Fat Ricotta
Salt & Pepper to taste

Method: 
1- Wisk eggs in bowl
2- Fold grated Zucchini and Ricotta into eggs
3- Season with Salt and Pepper
4- Heat 20cm Diameter pan and pour in mixture.
5- Keep on heat until outsides of the fritter have set, but the center is still runny.
6- Remove from heat and place under grill until the fritter is completely set.
7- Serve.

Pumpkin Chips

Peel pumpkin and cut into chip like strips, place on oven tray and spray with a little bit of light cooking oil.
Season with Salt and place in Oven at 200¬įC for around 20 minutes or longer depending on your preference of texture.

Prosciutto Wrapped Chicken Roll Ups

Serves 4
Ingredients:
4 Chicken Breasts
16 Slices of Prosciutto
6 Tablespoons Low Fat Cream Cheese (I use Cheddar or Philadelphia)
6 Rashers Short Cut Bacon
6 Teaspoons Garlic Powder
Salt & Pepper to Taste
Mixed Herbs

Method:
1. Pre Heat Oven to 200¬įC
2. Slice each chicken breast in half to create 2 thinner breasts
3. Remove fat from bacon, dice into small cubes and fry in non stick pan until browned
4. Add Cream Cheese, Garlic Powder, Salt, Pepper, Herbs and Bacon into bowl and mix together.
5. Spread Cheese mixture onto each halved chicken breast
6. Tightly roll up each chicken Breast and wrap with 2 pieces of Prosciutto, hold together with tooth picks.
7. Wrap each chicken breast in foil and place in oven for 30 minutes.
8. Remove foil from chicken and return to oven for a further 10 minutes or until prosciutto is crispy.
9. Remove toothpicks and serve.

First Goal Achieved!

I was a little nervous jumping on the scales this week but when I saw the magical number of 99 displayed I was ecstatic!
The last time I remember being under 100kg was over 3 years ago! SUCH A GOOD FEELING!

This means that since my first attempt of The Dukan Diet back in October 2011 i have lost 18kg! I cant believe it!
I am not really noticing any changes when I look in the mirror as of yet BUT i tried on a few dresses over the weekend that I have not worn since I weighed 117kg.. they were sooo loose! This really put a smile on my face as it is the only real confirmation for me that I am actually loosing weight.

I have now set myself another mini goal  of 90kg as this seems a lot more achievable than 70kg and I would ideally like to be at 90kg within 5 weeks but realistically I will allow 9 weeks.

Into Week 6

So I am a bit disappointed this week as the scales have not shown any weight loss. 
I choose to record my weight loss on a weekly basis rather than daily as Dukan encourages but I still weigh myself 2-3 times per week just to see how its going. 

I did weigh myself on Saturday and was excited to see the I was now at about 100.5kg! But then I weighed myself on Sunday and was back up to 101kg!

I know I¬†shouldn’t¬†be let down¬†by these results as it is going to change everyday! BUT I am now very determined to reach my first goal weight of 99kg by this Sunday!¬†

Miracle Noodles

After reading about Miracle Noodles for a few months I finally gave into temptation and purchased their Angel Hair Noodles.

First positive- I ordered them on Tuesday (August 7th) and received them yesterday (Thursday August 9th).
I was really impressed by this.

I was so excited to give them a try last night so I adjusted my meal plan and decided to make a chicken stir-fry (minus the veggies as it was my PP day)

I was really surprised by the texture of the Miracle Noodles but am still unsure whether it was a good surprise or a bad one.

My expectations for this dish were not very high but WOW was I shocked.
It was DELICIOUS!

The addition of Greek Yogurt and Garlic powder really made this dish spectacular!

The Miracle Noodles¬†don’t¬†exactly have their own¬†flavor¬†but took on the¬†flavor¬†of the rest of the ingredients I had used and I was very satisfied!

I cant wait to try them in more recipes.

Chicken Stir-fry

Ingredients

2 Chicken Breasts
Tbsp Lemon Juice
Tsp Garlic
1/4 Tsp Ginger
2 Tbsp Soy Sauce
1 Tbsp Oregano
Salt & Pepper to taste
1 Tbsp No Fat Greek Yogurt
1 Tsp Garlic Powder

Method

1- Cut the chicken into about 3 cm cubes/strips and stir-fry with salt and pepper until you can not see anymore pink
2- Add Garlic, Ginger, Oregano, Lemon Juice & Soy Sauce stir until chicken is cooked all the way through.
3- Add Miracle Noodles, keep stirring for a further 2-3 minutes to allow noodles to absorb flavors.
4- Once dished up stir through Greek Yogurt and Garlic powder.

Attack Phase/Cruise Phase.

Steak Sandwich

Steak Sandwich

This is something that I have been craving on this diet since day one. A big, juicy, flavorsome Steak Sandwich.
When I discovered that there was such a thing as Dukan Bread I was oh so excited and had to try it immediately.
If I had known all of the things that I know now when I was on Dukan last time, there is no doubt I would have lasted a lot longer.
I¬†don’t¬†feel as if I am missing out on ANYTHING anymore, its amazing!

I have come across many different recipes and variations of Dukan Bread and I have tried a couple of them but the recipe I found on Dukantopia is so far my favourite. It is just so easy and tastes great!

I just used Blade Steak for this recipe, I seasoned it with salt and pepper, wrapped it in foil and put in the oven at 200¬įC¬† for about 20 minutes.
It came out just how I like it, a tad pink in the middle and VERY tender.

On my Steak Sandwich I then added, very low fat sliced cheese, tomato, lettuce, egg, bacon and a dash of salt reduced tomato sauce.

I was not disappointed with my Steak Sandwich, it satisfied all cravings and left me feeling very happy with myself.
